DAIKAN (大寒)

“Daikan (大寒)” is the 24th of 24 solar terms (節氣) in the traditional East Asian calendars.
It literally means “big cold”, and it is the coldest period of the year.
It is 15 days after the beginning of midwinter.
The period of 30 days from the beginning of mid winter to the first day of spring (February 4th this year) is called “Kan-no-uchi (寒の内)” which means the coldest season, and it is the season for making food such as frozen tofu, vegetable gelatin, sake and other things using the coldness.
